Why electric rather than charcoal
Charcoal gives a flavour electric cannot reproduce — that is a given and we are not hiding it. But it has three practical obstacles that electric solves entirely.
Time. Charcoal takes half an hour to be ready. An electric grill heats in minutes, so you can grill on a weeknight rather than only on a Sunday.
Space. In a block of flats, charcoal is often banned or simply annoys the neighbours. Electric works on a balcony and indoors.
Cleaning. Ash, grease and a grate that needs scrubbing, against plates that on many models lift out and go in the dishwasher.
What to check
Power. This is the critical specification. A low-power grill boils the meat instead of searing it, especially if you load it up. The juices do not evaporate and the result is grey instead of browned.
Ridged or flat plate. Ridged gives grill marks and drains fat. Flat does fish, vegetables and eggs better. Many models include both.
Fat collection. A tray that catches the juices is the difference between grilling and filling the kitchen with smoke.
