When you genuinely need a stand mixer
A hand mixer covers almost everything for occasional baking. A stand mixer becomes essential in three cases.
Heavy dough regularly. Bread, enriched dough, pizza dough. A hand mixer strains and eventually burns out; a stand mixer kneads for ten minutes without breaking a sweat.
Large quantities. When you cook for ten or for the holidays, a 4-6 litre bowl does the job in one go instead of three rounds.
You want to do something else. It kneads on its own while you prepare the rest. That is why you end up using it more than you expected.
The real advantage: the attachments
Serious stand mixers — and KitchenAid in particular — accept attachments that turn them into another appliance entirely: meat grinder, pasta roller, juicer, vegetable slicer, ice cream bowl.
In practice that means one machine on the worktop replaces four that would otherwise sit in a cupboard. And the attachments are bought gradually, whenever you need them.
That is also what justifies the price: it is not a mixer, it is a platform.
What to check
Bowl capacity. 4-5 litres for a family, 6 and above if you often make large quantities. Note that a large bowl does not work well with small amounts — the whisk cannot reach two egg whites.
Power and transmission. On heavy dough, torque matters more than watts. Machines with metal gears last far longer than plastic ones.
Weight. Good stand mixers are heavy on purpose — so they do not "walk" across the worktop when kneading stiff dough. But the weight means you will not be moving it: find it a permanent place.
