Three types, three uses
Hand mixer. The classic with two beaters. Light, cheap, fits in a drawer. It beats eggs, meringue, cream and light cake batters. The choice for anyone who bakes occasionally.
Bench mixer. It sits on a stand with a rotating bowl, so you do not have to hold it. A middle option between a hand mixer and a stand mixer.
Stick blender. You plunge it straight into the pot. It purees soups without transferring them — which is its great value, because moving hot soup into a blender is both difficult and dangerous.
What actually matters
Power for dough. A 300W mixer beats eggs and cream perfectly well. On heavy bread or sweet-bread dough, though, it struggles, overheats and eventually burns out. If you knead regularly, you need either a powerful mixer with hooks or a stand mixer.
Attachments. Beaters are for air — meringue, cream, custards. Hooks are for dough. Many mixers come with both; check, because without hooks you cannot knead.
Speeds and a turbo setting. The low speed exists so flour does not spray across the kitchen at the start. It is more useful than it looks.
Practical points that save recipes
Always start on low speed and build up gradually. It is the only way to keep flour off the worktop.
Clean the beaters immediately. Dough and meringue dry and turn to cement within an hour.
Do not strain the motor. If the mixer starts to smell or heat up, stop. Most state a maximum continuous running time — exceeding it is the number one cause of failure.
